Are you tired of my fresh mint recipes yet? Sorry. I know. But it is growing as fast as I can use it! And I know there must be tons of people with the same issue- like anyone that plants it in their yard. Another recipe with the fresh mint: Mint Simple Syrup.

Well this beautiful mint simple syrup infused with *fresh* garden mint is so easy and it really turns out delicious. It smells like candy.yummy, sweet mint candy 🙂 Wonderful for cocktails or mocktails! And I was thinking would also be amazing for an iced mocha. Ooooohhhhh. I just thought of that, and now I have to go make it.

Mint Simple Syrup

Mint Simple Syrup, yields ½ cup
-½ cup sugar
-½ cup water
-8 large, fresh mint leaves

1) In a small pot, combine the sugar and the water.

2) Add the mint leaves.

3) Bring to a simmer, gently swirling the pot to cover the mint leaves.

4) Simmer for about 1-2 minutes, or until the sugar is dissolved.

5) Let cool just enough to get it into a blender.

6) VERY carefully puree the mixture on high until the mint leaves release all of their juice into the simple syrup.

7) Pour the mint simple syrup through a small strainer and into a jar or heat proof bowl. Discard the mint solids.

8) Refrigerate until ready to use. This should last a few weeks in an airtight container in the fridge.
