Devils Food Whoopie Pies

I had a baking spree with my girls this past weekend.

They really wanted me to make something “Halloweeny.” And because Pia was involved, it had to be chocolate. I thought about my poor old whoopie pie pan that hasen’t been used since this.

The most appropriate chocolate cake I could think of was “Devils Food Cake!”

So Devils Food Cake whoopie pies filled with creamy chocolate peanut butter buttercream frosting it was.

Well, a little bit scary. When Coco saw those eyeballs she screamed “noooooo” and ran away.

Devils Food Whoopie Pies, makes 12 pies
6 Tbs butter
1 cup sugar
2 eggs
1 tsp vanilla
1 cup flour
½ cup cocoa powder
¾ tsp baking soda
½ tsp baking powder
½ tsp salt
¾ cup milk

Chocolate peanut butter buttercream
½ cup soft butter
4 cups powdered sugar
¼ cup milk
½ cup peanut butter
2 oz dark, unsweetened chocolate

Preheat the oven to 350 degrees. Prepare a whoopie pie pan with baking spray.

In the bowl of a standing mixer, combine the butter and sugar until fluffy.

Add the eggs and the vanilla and beat until fluffy and well combined.

In a separate bowl, combine the flour, cocoa powder, baking soda, baking powder and salt.

Add the dry ingredients to the mixer and partially combine.

Add the milk and combine all of the way for a smooth batter.

Using an ice cream scoop, spoon the batter into the whoopie pie pan. You should only fill it ½ way to 2/3rds of the way full.

Use a little offset spatula to make sure that the batter spreads to the edges of the pan.

Bake for 12-15 minutes, or until just baked through and fluffy.

Let the little cakes cool on a rack and repeat the process with the rest of the cake batter.

While the cakes are cooling, make the chocolate peanut butter buttercream.

To make the frosting, combine the butter, sugar and milk in the bowl of a standing mixer.

Combine and then add the peanut butter and the chocolate and whip to a creamy frosting.

Melt the chocolate in the microwave and add to the frosting when it has cooled. Whip until smooth.

Spread or pipe onto half of the whoopie pie cakes, and then top the frosting with another cake.

Add candy eyeballs for a funny and creepy affect!
