Happy #ThirstyThursday!! OMG. Did any of you see my crazy facebook post where I chronicled my “fit bit” evaluation of Tuesday Nights sleep? Um…. It wasn’t good. I woke up 33 times and got a grand total of 3 hours and 53 minutes. Needless to say, I am going to crash tonight.

Vodka Strawberry Lemonade

Especially since I just had one of these Vodka Strawberry Lemonade Cocktails after dinner. Mostly I had some left over the fridge and thought- oh yum, dessert! And they are so, so sweet and sour and delicious that I drank a whole one. Just enough to make me relaxed and a little drowsy. Combined with my sleep deprivation, it will be an early night!

But I don’t want to diminish how delicious and summery these cocktails are. It is a really concentrated mix because I mean to drink them as cocktails, not vodka watered down strawberry lemonade. If you like a little less sweet and tart, then just add more water- but taste first to see what you think.

I thought that these would be really fun for the holiday weekend since they are so seasonal and cheerful. I hope you guys have a wonderful weekend, cheers!

Recipe: Vodka Strawberry Lemonade Cocktails

Ingredients

  • Strawberry Simple Syrup:
  • 1 cup fresh strawberries
  • 1 cup sugar (we used beet sugar)
  • 1 cup water
  • Lemonade:
  • 1 cup freshly squeezed lemon juice
  • 1 cup water
  • 1 cup vodka
  • mint and lemon slices for garnish
  • ice cubes

Instructions

  1. In a small saucepan, combine the sugar, water and strawberries and bring to a simmer until the sugar is dissolved.
  2. Throw into the jar of a blender and puree until smooth. Strain through a fine mesh sieve into a pitcher.
  3. Add the lemon juice, water and the vodka to the strawberry simple syrup.
  4. Fill the glasses completely with ice cubes and add some mint and lemon slices. Pour the cocktails over the ice and serve immediately.

Preparation time: 15 minute(s)

Cooking time: 2 minute(s)

Number of servings (yield): 4
