When you are faced with allergies, you immediately feel that you have to give up all of the things that you love. It’s intense and all consuming for many of us as you grieve your favorite dishes that you once took for granted. The things that you never realized that you wouldn’t be able to eat again without making yourself sick. Ok, drama, drama. But in all seriousness that is how it felt for us until I started learning ways to reinvent the food that I love and that my children love. To be honest, making them happy while keeping them healthy has been one of my biggest time consumers in the last 6 months.

That is why after lots of experimenting with recipes, this delicious waffle recipe made my day. Maybe my week. And my kids were so happy- like grinning ear to ear, which is the best feeling EVER.

These are crispy and still have a little fluffiness to them, and the vinegar in the recipe emulates the buttermilk flavor of traditional waffles. I think they are awesome as-is, but I found that they get much more golden and fluffy if you let the batter rest in the fridge over night. So now I have started making the batter the night before and then I have no fuss in the morning- it literally takes the same amount of time as making toast. I also make them in bog batches and freeze them and then I heat them up in the toaster for a super easy breakfast!

But of course, what makes these so crazy is probably the fact that we just went ahead and cooked the bacon right into the waffles. Because why wouldn’t you!? Then you get a bite of waffle and bacon and syrup in every mouthful with no extra effort! I also loved the blueberries for their sweet and sour flavor combined with the bacon- delicious! And then the best part is that we can generously douse it all in syrup because Pure Maple Syrup doesn’t have any cane sugar in it- horrayyy!!!

To make these Bacon waffles, this is what you do:
In the jar of a blender, add the oats and blend on high until you have a flour.

Add the rest of the dry ingredients and puree to combine.

In a separate bowl, combine the milk, vinegar, oil and vanilla. Add it to the fours and puree until you have a well combined batter. Let the batter sit at least half an hour in the refrigerator, it should thicken up and get a little fluffier. (The batter is even better the next day)

Heat your waffle iron to medium-high. Pour a little bit of batter and then lay the three pieces of bacon on top of the batter and cover with more batter. Close the iron.

Cook the waffles until golden.

  • Waffles:
  • ½ cup rolled oats (gluten free)
  • ¾ cup potato starch
  • 1 cup brown rice flour
  • 1 teaspoon kosher salt
  • 1 ½ teaspoons baking powder
  • ¼ cup sugar (I used beet sugar)
  • 1 tablespoon chia seeds
  • 1 ¼ cups almond milk (or other non-dairy milk)
  • 2 teaspoons white vinegar (or you could use apple cider viegar)
  • ¼ cup oil (I used canola)
  • 2 teaspoons vanilla
  • syrup to serve

Instructions
