I hope you have all had a glorious weekend! I am finally finishing up being lazy. I kind of gave myself this last week to “get back on track” / deal with my jet lag / kind of drag a little, but now I am really ready to get back to my life. (unfortunately, vacation does not last forever…)

Roasted Balsamic Salmon with Honey Glazed Cherries

In fact, I am posting this on a Sunday morning instead of afternoon because as my first act of getting myself back in the saddle, I have a book signing today! If you are in the greater Seattle area, I will be signing books from 12-2 at the Kirkland Metropolitan Market this afternoon! Plus, I think they whipped up a bunch of delicious treats from Generous Table fro you guys to sample, which is always nice!

Other than that- this has been a quiet weekend. It involved shutteling kids to birthday parties and getting my roots colored. Exciting stuff, no?? Also: Still living at my parents. (they are saints.) So I am feeling like I should really be cooking a lot- I mean, it is the least I can do! This is a dish I made this past week for dinner, and I am serious- it was totally incredible.. It looks really simple (and it is!) but the flavors from those fresh cherries and the gorgeous salmon we used (copper river) were AMAZING. Plus, I am so annoyed that I didn’t cut into the salmon so that you could see the color on the inside- which was basically bright red and totally gorgeous.

So besides the fact that I have a book signing this afternoon, I am also posting this this morning because this is kind of the perfect thing to make for Sunday dinner (or if you read this Monday, then this is an over-achiever Monday night dinner!) But Either way delicious and beautiful and very simple. I would serve this with a nice green salad and maybe some Saffron Rice or Couscous this or this pasta. Perfect dinner….

Roasted Balsamic Salmon with Honey Glazed Cherries

To make this Balsamic Roasted Salmon with Honey Glazed Cherries, this is what you do:

Preheat the oven to 400 degrees.

Cut the cherries from their pits and set them aside.

Put a sheet of tin foil on a sheet pan. Place your side of salmon on the foil. Drizzle with the olive oil and the balsamic and sprinkle generously with salt.

Turn the oven down to 350 degrees and place the salmon in the oven. Cook for 8-10 minutes depending on the thickness of the salmon and then remove and let sit a minute before serving. (if you are going to transfer to a serving platter, it is fairly easy to move the whole side of salmon as one piece if you use two large spatulas.

While the Salmon is roasting, make the honey glazed cherries.

In a medium pan, combine the olive oil and the honey. Bring them to a simmer and then add the cherries. Let them simmer for a few minutes and then add the balsamic. Simmer for a minute longer and then turn the heat off (you don’t want the cherries to start to fall apart). Season lightly to taste with kosher salt and then serve the cherries over the top of the salmon.
