10 summer tomato recipes

August is just a few days away and for us that means tomato season is in full swing! I just couldn’t help but pay homage to the beautiful tomato today (Top Ten Tuesday!!) with my top ten favorite Summer Tomato recipes- hope you enjoy!

 

Heirloom Tomato Pizza. The mother of all beautiful pizzas and besides a great crust and a thin layer of pesto, this pizza just celebrates the raw beauty of the heirloom tomato. Oh yeah, and it is totally delicious.

Salsa Verde. This is one of my favorite Summer sauces. I use my green tomatoes and make this regularly, using it for everything from dips, as salad dressing, and marinade and sauce for chicken and pork. It is also such an incredible mix in for any type of soup base or braised meat. A true wonder sauce!

Caprese Benedict with Basil Holandaise Sauce. A crispy English muffins, fresh mozzarella, basil and juicy heirloom tomatoes are topped with poached eggs and a lemony, buttery, basil flecked hollandaise in an amazing combination. It’s a Summer in a breakfast.

Fresh corn and Summer Squash Tacos. These just happen to be not only vegetarian, but Vegan! And are completely packed with delisious Summertime flavors and colors. A delight to the palate and the eye’s!

Peach and Tomato Crostini with Basil Lemon Ricotta. You might be surprised how nicely peaches and tomatoes go together. And when they are mixed with fresh basil and lemon ricotta- um, just yes.

BLT Sandwich. There is nothing like being able to enjoy tomatoes in a delicious BLT! This grown up version uses bacon cheddar bread, fresh basil and a whipped goat cheese that is just sinful… But even with all that goodness, the Tomatoes still steal the show!

Tomato Basil Soup. To me there is nothing more classic or delicious than really good Tomato Basil soup. And I find it to be comfort food, no matter the season. This,  my friends is a really, really good recipe for it.

Grilled Steak with Augula and Cherry Tomatoes has become a Summer Staple for us this year. Juicy, perfectly cooked grilled steak on a bed of peppery baby arugula is delicious enough on it’s own. But add this ultimate bruscetta-esque topping and you are really in business.

Blue Cheese Balsamic and Cherry Tomato Pizza: full of creamy blue veined cheese, sweet ripe cherry tomatoes, roasted garlic and my favorite, balsamic vinegar! Not only gorgeous, but so intense in flavors and textures.

Grilled Caprese Kebabs. All the ingredients of a simple summer caprese salad, heated up on a smoky grill until the cheese is gooey and melting and the tomatoes are juicy and hot and bursting with sweet flavors. Totally amazing. Plus these are also great for when you have company, because they can be made well ahead of time and just tossed on the BBQ at the last second.
