Hi guys- I am back from a couple days in freezing Chicago!! I went to the International Housewares Show in Chicago which is absolutely the most overwhelmingly large and fantastical convention ever. It is something like 2.6 million square feet. 2.6 MILLION. So yeah, it was big. But really- so cool and absolutely inspirational and at times I was down right lustful for the blown glass decanters and French steak knives and sustainable cleaning products and every single type of cupcake liner and kitchen gadget that you could ever fantasize about in your wildest dreams. Also, as it has been reviewed several times on this blog in the past- when moms leave town for the weekend, %$*& consistently hits the fan around here!

Chicken, Jalapeno, Lime Soup

I was picked up from long and very early flight and one of our cars started smoking on the way home. Like we almost pulled over on the side of the freeway. Luckily the car dealership is on the way from the airport to home, so we dumped it off and to call an uber. Then when we finally got home, and I was so starving I could have eaten my own arm, my 5 year old got super sick and I spent the afternoon at urgent care. WHY!??? (She is fine now, a little antibiotic action has quickly bounced her back ) but when we finally got back here and everyone was settled it was 5pm already! Holy Day Lights Savings Time!! Oh, and I still had not eaten- now I was ready for two arms.

But one lucky spot was that I had made this soup the a few days ago before I left and it was still absolutely delicious! I ordered the rest of the family pizza (gluten free pizza) and heated up a big bowl of this for myself. The spice, the lime and the garlic make the chicken and beans so incredibly flavorful. I mean, it is really so good, that I could eat a gallon of this stuff.

Chicken, Jalapeno, Lime Soup

 

Recipe: Spicy Lime Jalapeno Chicken Soup

Ingredients

  • 3 tablespoons vegetable oil
  • 1 large yellow onion, roughly chopped
  • 3 garlic cloves, roughly chopped
  • 1-2 jalapeno’s thinly sliced (depending how spicy you like it!)
  • 1 whole raw chicken
  • 2 cans white beans, rinsed and drained
  • 8 cups chicken broth
  • 1 lime
  • kosher salt
  • 1 fresh jalapeno, thinly sliced
  • freshly chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat the olive oil over medium high heat and then add the onions, garlic and jalapeno. Sprinkle with salt and saute 5 to 7 minutes until soft and tender and only lightly browned. Add the whole chicken to the pot. Add the chicken broth to the pot and put a lid in the pot. Turn the heat to low and let simmer for 60 minutes.
  2. Remove the chicken from the pot and transfer it to a large bowl or pan. Transfer the broth with the onions, garlic and jalapeno to the jar of a blender (you may have to do this in batches) and puree on high until smooth. Pour the broth back into the pot and add the fresh lime juice and the beans.
  3. Remove all of the chicken meat from the bones and skin of the chicken. Shred the meat and add it to the soup. Stir everything together and season to taste with kosher salt. Bring the soup to a simmer and serve hot with some fresh jalapeno slices, a sprinkle of fresh cilantro and a lime wedge.
