Anyways, that is all I could think about when I made these Turkey Curry Meatballs. Wait. Stop. Let me rephrase: these to-die-for-turkey-curry-meatballs! These are seriously so good. I was worried they might turn out a little lack-luster, but thank goodness I was completely wrong. On their own they are excellent and I could not stop swiping them off the tray, piping hot.

However, when piled on top of a zesty Asian slaw and a delicate lettuce cup and drizzled with a little Spicy Sunbutter Coconut Dipping Sauce these were absolutely out of this world. I ate until my stomach hurt- only I didn’t even feel guilty afterwards. I mean this is just pure protein and veggies. I love these as an appetizer, or I know from first hand experience that these are a perfect lunch or dinner. Enjoy!

Turkey Curry Meatball Lettuce Cups with Asian Slaw

Recipe: Turkey Curry Meatballs (paleo)

Ingredients

  • 1 pound ground turkey
  • 1/3 cup red bell pepper, small diced
  • 1 jalapeno, minced
  • 1 ½ teaspoons curry powder
  • 1 tablespoon fresh ginger, minced
  • 2 garlic cloves, minced
  • 2 teaspoons kosher salt
  • 1 tablespoons sesame oil
  • 1 tablespoon rice wine vinegar.
  • 12 Butter lettuce leaves
  • Asian Slaw
  • Spicy Sunbutter Coconut Dipping Sauce (optional)

Instructions

  1. Preheat the oven to 375 degrees. Prepare a sheet pan with a silpat or parchment paper.
  2. Combine all of the meatball ingredients in a large bowl and using clean hands, mix everything together until it is uniform.
  3. Form 12 meatballs and place them on the prepared sheet pan. Bake them for 15 minutes.
  4. While the meatballs are baking, make the Asian Slaw and the Coconut Dipping Sauce if desired.
  5. When the meatballs are ready, prepare each butter lettuce leaf by piling on the Asian slaw and a drizzle of the sauce of desired and top with a meatball. Eat like a taco.
