So I have been waiting to tell you what I was up to until I knew that I was actually up to it. Which is to say, I have taken on a new exercise pursuit, but didn’t want to tell you only to find that I had already abandoned it (um, that is my usual MO).

Have you all heard of Barre classes? (exercise, not liquor). I went to my first class about 2 and a half years ago. But I go, I am terrible, I am wearing the wrong clothes, I am tragic, it’s super embarrassing, I sweat, I can’t do any of the moves and then I borderline throw up/cry and limp home after class. Then I can’t walk for a few days and think I will never go back. Then repeat this cycle every 6 months since 2013.

Well in the spirit of trying to step up my health and exercise game, I said yes to a little challenge recently. A dear friend called and asked if I would do a Pure Barre challenge with her that was 25 classes in 30 days. After I blacked out from the horror and shock of the prospect, I said yes. Sometimes you have to get uncomfortable to make changes. So here I am, almost half way through the challenge and ten classes deep- yes I have to step it up a notch, but I am totally proud of myself. I still sweat and flop about and am the least graceful person in the class, but I am getting better (just a little bit). And most importantly I am showing up and trying. I will keep you updated- but so far I am leaning towards love on the love-hate scale. I hope that this will encourage me to take on a whole new component of my health and exercise game plan, and also a higher tush would be nice, you know?

Have any of you tried this class, or better yet, stuck with it? Advice!? success stories? Encouragement? (please!!!!)

 

Carrot Ginger Soup

 

In the same spirit of improving my health I have been trying to eat really healthy during the week (because Summer weekend indulging happens!) One of my new favorite VERY HEALTHY recipes is this Carrot Ginger Soup. My vegetable garden full of fresh carrots and Pacific Foods teamed up to bring you this gorgeous and delicious soup that is not only going to knock your socks off with flavor, but you will feel great after eating it. I love that the broth I used had a little lemongrass already in it and that the flavors paired so well with the ginger and carrots. Everything combines to create a simple soup with fresh but complex flavors. I also love that you can eat this soup hot or chilled and its great either way. Enjoy!

*It’s also really good with a dollop of this sauce!

Recipe: Carrot Ginger Soup

Ingredients

  • ¼ cup olive oil
  • 1 yellow onion
  • 1 ½ tablespoons ginger, peeled and chopped
  • 1 clove garlic, chopped
  • 6 cups carrots, chopped
  • 4 cups Pacific Organic Chicken Lemongrass Bone Broth
  • Kosher salt

Instructions

  1. In a large pot over medium heat, add the olive oil and the yellow onion. Sweat the onion, stirring often for 5 minutes until soft. You don’t want any browning of the onions, so be sure to turn the heat down if you are worried about color on the onions.
  2. Add the garlic and the ginger and continue to cook, stirring often for another 3to 4 minutes.
  3. Add the Carrots and stir, cooking another 2-3 minutes. Add the broth and cover the pot. Reduce the heat to low and simmer on lowest heat for 30 minutes until the carrots are very soft.
  4. Transfer the soup to a blender (or use an immersion blender) and puree on high until the soup is very smooth. Season generously with kosher salt.
  5. This soup can be gently reheated and served hot or is delicious chilled and served cold.

Preparation time: 15 minute(s)

Cooking time: 40 minute(s)
