Im starting my third week of eating super clean in the new year. I have to admit, outside of a chips and salsa hiccup this past weekend (it’s truly my kryptonite), I am really doing pretty damn well. Getting to the gym with consistency is always something that I will have to keep working at, but the eating is going swimmingly.

I basically piled every nutritious, delicious bite from my fridge and tossed it all with a zesty lemon vinaigrette. It turned out as a brilliant, tasty salad packed to the brim with color, texture and majorly healthy ingredients.

If this can’t get your Monday off to an amazing start, I don’t know what will- enjoy!

Detox Power Foods Salad

Ingredients
  • 1 large bunch curly kale, stems removed and finely chopped
  • 2 large yellow beets, boiled to fork tender, peeled and sliced into wedges
  • 1 avocado, thinly sliced or cut into chunks
  • 2 large carrots, peeled and thinly sliced
  • 6 strawberries, thinly sliced
  • ¼ cup toasted pepitas
  • ¼ cup sliced almonds
  • 1 shallot, minced
  • Lemon Garlic Viniagrette
  • 1 garlic clove, minced
  • 2 teaspoons agave
  • 1 fresh lemons juice
  • ¼ cup olive oil
  • kosher salt
Instructions
  1. Finely shop the kale and add the beets, avocado, carrots, strawberries, pepitas, almonds and shallot.
  2. In the jar of a blender combine the vinaigrette ingredients and puree until smooth then season to taste. Toss the dressing with the salad until the leaves are coated. Serve immediately.
