Happy Thirsty Thursday guys! I am a wee bit late on this post because I am waking up after a very fun night in San Francisco. I flew down here for 24 hours with my hubby and we had dinner at Kokkari, the most amazing Greek restaurant and we were extra delighted to spend time with my friend Michael who works there. All in all- I had a delicious dinner and waaaay too much wine. But it’s ok to wake up with a small thumping in my head- after all it is thirsty Thursday….. Vodka Collins

But before all that nonsense, I had a few hours to myself. And instead of responsibly writing this post and getting through my inbox, I threw on a short sleeved shirt (because it was like 70 here!!) and walked this city until I got blisters. I realized that I have barely been here since I left when I was 23 and I basically did a walk down memory lane. My old job, my old culinary school location, my old apartment- the area where I used to hang out. I even realized that I walked past the Laundromat where I used to wash my culinary school uniforms every few days. It was so weird.

Anyways- the blisters were real and so is the way that my calves feel today- sore. There are indeed a lot of serious hills here, no wonder I was in such good shape when I lived here! Well, the hills and the fact that I was 23, right? Ok Enjoy this Gin filled Tom Collins for me filled with PINK cherries! (I couldn’t help myself!)

Ingredients
  • 2 ounces gin
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon simple syrup
  • chilled club soda
  • ice
  • marshino cherry and citrus slices for garnish
Instructions
  1. Fill the glass with ice and add the gin, lemon juice and simple syrup and stir well. Top with the chilled club soda, garnish and serve immediately.
