Good Morning guys! By the time you are reading this I should be on an airplane to Mexico with Pete and the kids for a short vacation. While I am excited, the dynamics of this trip have suddenly changed. I have shingles. On my face. Ha!

Remember a few weeks ago when I was like high-fiving myself for my ah-mazing immune system? Well, I guess the stress of the world has gotten to me and given me a pretty serious smack (on the face!) I noticed things were going all wrong by Saturday when I went to an urgent care clinic thinking I had strep throat, then by Sunday I started to get an inkling of what is really going on because my dad had shingles (also on his face) last Spring. Monday I was diagnosed, passed around a couple doctors (optometrist) and medicated. The good news is it’s on the mild side, it’s being treated in a SERIOUS way with every possible pharmaceutical and homeopathic remedy I know about (please let me know if you have any advice though!) and I am headed to Mexico to do nothing but rest- which has proved surprisingly difficult to do at home. My poor family will have to be seen out in public with the swamp monster, but other than that I am happy to be going to go spend quite time with them.

And doesn’t guacamole fix most things? Well, usually I say tequila is the best medicine, but I will be skipping that for a few more days. Please feel free to follow along on insta-stories, and don’t expect any selfies!

Smoky Beet Cobb Salad

Ingredients
  • Cobb Salad
  • 1 head iceberg lettuce, chopped into bite sized pieces
  • 2 cups shredded cooked chicken
  • 4 strips crispy cooked bacon, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 avocado, large diced
  • ½ small red onion, thinly sliced
  • 2 cups blanched green beans, quartered on a bias
  • 2 cups cooked beets, sliced into wedges
  • Smoky Beet Dressing
  • ¼ cup cooked beet chunks
  • 2 garlic cloves
  • 2 teaspoons smoked paprika
  • ¼ cup red wine vinegar
  • ¼ cup olive oil
  • kosher salt to taste
Instructions
  1. Arrange all of the salads ingredients on a platter. (I like to arrange them by ingredients on the bed of iceberg lettuce myself!)
  2. For the Smoky Beet Dressing:
  3. In the jar of a blender combine the beets, garlic, red wine vinegar and olive oil and puree on high until smooth. Season to taste with kosher salt. Drizzle the salad with the Smoky Beet Dressing and serve more on the side.
