Happy Thirsty Thursday!!

I have a particularly delicious cocktail for you today. In fact as I am writing this and thinking about it, my mouth is puckering and salivating! This drink is the best damn thing I have had in a while. It is so sweet and tart and tropical (which is great for pretending while we spend “Spring Break” in gray rainy Seattle.)

But amazingly enough, there is not a bit of added sugar!

I sliced up fresh sweet strawberries and peeled and pitted a ripe mango (it was extra sweet!) Then I added some freshly squeezed lime juice, coconut water and RUM!!! It truly blends into a really finely frozen concoction that is just delicious.

I feel like these would make for one fun party! You could certainly get into trouble if you had a few of these…

But I happen to know that they are also really good sans booze- as my kids demanded (quite nicely) that they get to have daiquiris too. So if you have a hot summer day- this would also make for a nice (no sugar added) dessert for the kids (or grownups).

Frozen Strawberry Mango Daiquiri

Ingredients
  • 2 cups frozen strawberries
  • 1 ½ cup frozen mango chunks
  • 2 cups ice cubes
  • ⅓ cup fresh lime juice
  • ½ cup coconut water
  • ½ cup dark rum
Instructions
  1. Add all of the ingredients to the jar of a blender and puree on high until really smooth. Split between 4 glasses and garnish with a fresh lime slice.
