I hope that you all had a wonderful weekend! I had waaaay too much fun and I am still recovering.

Two nights out is too much for an old lady like me to handle. I had to spend all day on Sunday lying on the basement couch watching an Outlander marathon, followed by a Seahawks pre-season game, followed by Game of Thrones. I have basically grown into the couch.

SO after my overly rowdy weekend, the best way for me to get on track is to start things off with a really good healthy meal! I made this so that I could take it to work for lunch for a couple of days- but I would also eat this as part of a healthy dinner. I just basically piled every wonderful summery thing that was fresh into it! Sweet corn and juicy cherry tomatoes that pop in your mouth, amazing peaches and crunchy peppery radishes- it’s all wonderful together and very filling- exactly what I want to be eating right now!

Summer Farmers Market Quinoa Bowl

Ingredients
  • Quinoa:
  • 2 ½ cups vegetable broth
  • 2 teaspoons kosher salt
  • 2 cups white quinoa
  • 1 cup finely chopped parsley
  • 3 green onions, thinly sliced
  • 2 ears of corn kernels
  • 2 cups cherry tomatoes
  • ½ cup radishes
  • 1 fresno chili, thinly sliced
  • 1 peach, thinly sliced
Instructions
  1. For the Quinoa:
  2. Bring the broth and salt to a simmer over medium heat and then stir in the quinoa. Stir well and bring the quinoa to a simmer then turn the heat to low and put lid on the quinoa. Simmer for 20 minutes and then turn the heat off and let sit until you are ready to serve.
  3. Then fluff the quinoa with a fork and gently stir in the fresh parsley and the green onions and corn. Season to taste with kosher salt.
  4. Add the cherry tomatoes, radishes, chili and peach slices and serve at room temperature or chilled.
