I am so sorry that this has been such a slow week here on the blog guys- things have been hectic around here and my Thirsty Thursday post slipped through the cracks! (But don’t worry- it will be back next week!)

Everything Bagel Socca- Gluten Free

We are actually headed up to Whidbey Island right now and are so excited to be on the beach and we are going crabbing and having a bon-fire and the whole 9 yards- follow along on Insta-stories to see all of our beach adventures! We also have BBQ’s at home in the works and lots of enjoying the sunny weather and spending these last few days with the kids before they go back to school.

And one of our favorite things on these kind of long weekends is to go for walks with the family in the morning and then come back and make a special “weekend breakfast” (as the kids call it.) And this Everything Bagel Socca is the new favorite!!! I made it last weekend and we just freaked out it was so good.

I love socca anyways- if you have not had it before, its like a tender/crispy around the edges chickpea savory pancake! And it is SO GOOD!!!! I covered it in Everything Bagel Mix (I buy this at Trader Joes but you could make a mixture yourself.)

If you are vegetarian or vegan, you could leave the salmon off and it would be still be awesome.

If you can eat eggs (I wish I could!!) I bet a fried egg on top would be bomb.

Probably some thinly sliced cucumbers would have been a good idea! I think the point is that it’s an “everything bagel” wanna-be- so put everything that sounds good on the dang socca!

Everything Bagel Socca- Gluten Free

Everything Bagel Socca – Gluten-free

Ingredients
  • 1 ¼ cup garbanzo bean flour
  • 1 teaspoon kosher salt
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 ½ cups hot water
  • ⅓ cup finely sliced green onion
  • 1 tablespoons Everything but the Bagel Mix
  • Toppings:
  • Sliced Avocado
  • Finely diced red onion
  • Cherry tomatoes
  • Smoked salmon
Instructions
  1. Preheat the oven with a 10” skillet in it to broil.
  2. In a mixing bowl whisk together the flour, salt, minced garlic, olive oil and hot water and whisk until smooth. Then add the finely sliced green onion and mix them into the batter.
  3. When the oven is up to broil take the skillet out and add enough olive oil to cover the bottom of the pan (about 1-2 tablespoons.) Then pour the batter into the pan, and use a spatula to carefully spread the batter evenly over the pan. Sprinkle the Everything Bagel Mix over the batter and put back in the broiler for 7-8 minutes.
  4. Remove the socca with a spatula or turn it out upside down onto a cutting board. Top with sliced avocado, onion, tomato and salmon (if desired) and then cut into slices or tear apart.
