Whether you live in Seattle or maybe you have seen the footage of our epic snow storm here (don’t laugh if you live somewhere where snow is normal!)- for us Seattleites this is pretty serious!

There is about a foot outside, and it is still snowing. (I will post pic’s this weekend)

Let me give you a visual of my household. Two kids that are not at school, but instead trapped in the house. One of them is 2. If you have ever had a two year old, then nuff said.

Then there is baby Mason . Who I have been potty training day and night in snow and ice storms. So basically, I have taught him that going potty outside = frostbite hell. Awesome, huh?

I look like a woman that has been taking care of two children without a break. I look like a woman who has been up every couple of hours all night for the last week. I look like a woman who has made 12 recipes in the last few days and uh, “sampled” them all. It’s not pretty.

I haven’t been outside since Sunday. There are no available babysitters. Again, it’s not pretty.

But there was one delightful treat that kept me happy and blissfully sugar high, and that are these Almond Joy Cookies. I called them that for their obviously delicious trio of chocolate, coconut and almonds.

I have had a lot of these, and now it’s your turn to make them!!

 

This is what you do:

1)Preheat the oven to 350 degrees, and prepare two sheet pans with parchment or silpats.

2)In a mixing bowl, cream together the butter and sugar until creamy.

3)Add the eggs and beat until creamy

4)Meanwhile mix the dry ingredients together in a separate bowl.

5)Add the dry ingredients to the mixing bowl and stir until you have a thick cookie dough.

6)Add the coconut, chocolate chips and almonds and mix until well combined.

7)Scoop the cookies onto the sheetpans and bake at 350 for about 10 minutes. (when you take the cookies out they should still be a bit doughy looking in the middle- they will stiffen up).

Makes 2 dozen cookies

Ingredients

  • 
-1 cup salted butter, softened
  • -1 ½ cups white sugar
  • 
-2 eggs
  • -2 ¼ cups flour
  • -1 tsp baking soda
  • -1 tsp salt
  • 
-2 ½ cups sweetened shredded coconut
  • 
-1 ½ bags chocolate chips (3 cups)
  • -2 cups peeled, slivered almonds

Instructions

  1. 1) Preheat the oven to 350 degrees, and prepare two sheet pans with parchment or silpats.
