If you remember I made a Halloween variety of these last year and they seemed to go over pretty well. Since these are like the most extreme brownies ever, I thought the superbowl was an appropriate event to trot these out. The fact that Oreo makes both green and orange Oreo’s helps tremendously.

I know I wrote about the Seahawks mania last week, but it seems to have reached a fever pitch around here. There is not a jersey left for sale and even the local pharmacy is selling every last type of little accessory with an emblem on it. I saw a Seahawks back scratcher last night.

So Cheers to a super fun Superbowl! Tomorrow I am going to do a really fun SUperbowl roundup so that you have all of my go to recipes in one place at your finger tips come prep time this weekend. Ok. May the best team win!!!

Preheat the oven to 350 degrees, then prepare a 9×9” pyrex baking pan with two sheets of foil (Kris-crossed) and then lightly spray the foil with baking spray.

In the bowl of a standing mixer, cream together the butter and the sugar until fluffy. Add the egg and peppermint and beat until fluffy. In a separate bowl, combine the dry ingredients and then add it to the bowl. Cream the batter until it is creamy and well combined.Mix in the chocolate chips and then transfer the batter from the mixing bowl to the pan, pushing it down into an even layer on the bottom of the pan.

Follow the cookie dough with the layer of Oreos. They should be lined up fairly tightly.

Make the brownies mix or homemade recipe and add ½ teaspoon of peppermint extract to it. (You can also add m&m’s to the batter like I did in the pictures).

Transfer the brownie batter to the top of the oreos. Gently spread the batter into an even layer.

Put the brownies into the oven and let them bake for 50-60 minutes at 350 degrees.
Let them cool 30 minutes before frosting them.

For the frosting: Bring 1 cup of cream to a simmer and then remove from heat and whisk in the bag of chocolate chips. Whisk until smooth and set aside while the brownies cool.

Pour the frosting over the top and add the sprinkles and the m&m’s. Then let the whole pan with the frosting on it cool another 1-2 hours. They must be completely cool when you cut them.

Take them out and slice them and serve immediately or store in an airproof container until ready to serve.

  • 12 ounces semi sweet chocolate chips
  • Sprinkles
  • 1 cup m&m’s in blue and green
