So yesterday, in the blustery freezing weather I craved to duck into Pastis in New York and happily gorge on one of my favorite things ever- A huge piping hot bowl of French Onion Soup. For me, the rich caramelized, buttery onions and broth, crispy brown bread and gooey melted gruyere are one of the best indulgences ever. I always make a point to stop there and have that lunch when I am here, and with it being as cold as it is- it seemed like the perfect day for it.

Dreaming of tucking into that soup, I remembered that I had this recipe stashed away for you. It has all of the flavors of traditional French Onion Soup, only in a very convenient pizza! I love the idea of hand held slices of caramelized onion and melted gruyere! Plus the tiniest hint of scotch and a bit of sugar makes the onions that much more indulgent.

The night I had this, I added a big green salad with avocado and it was amazing. Also, I added options for this to be gluten free by using this crust, and you could certainly use vegetable broth instead of beef for a vegetarian dinner. It’s always nice to have options, right!?

To make this French Onion Pizza, this is what you do:

Preheat the oven to 400 degrees and prepare a sheet pan with a drizzle of olive oil.

If you are using regular pizza dough, then stretch it out into a large oval and fold the edges over to create a crust. If you are using the gluten free pizza crust, than follow the directions in this recipe for preparing the crust.

Start the onions: In a heavy pan or skillet, melt the butter and add the onions along with a sprinkle of salt.

Cook over medium heat until the onions are soft and tender about 7-10 minutes.

The pan will be very dry, add the scotch and keep it away from the flame or it will catch fire. Stir it in and then add the 2 cups broth. Cook for another 15-20 minutes over medium-low heat, until all of the liquid has cooked off and the onions are very soft.
Sprinkle them with sugar and season to taste with Kosher salt. Set aside.

While the onions are cooking, drizzle the crust with olive oil and sprinkle with kosher salt and par-bake the crust for 10-12 minutes until it is golden and firm.

When the crust and the onions are finished, spread the onions liberally over the crust.

Arrange the thin slices of gruyere over the top of the onions. Drizzle with a little more olive oil and bake the pizza for another 8-10 minutes.

Sprinkle with a little curly parsley, slice and serve immediately.

  • 6 ounces gruyere cheese, thinly sliced
