Ok, I really went for it today. I had to get a phone and I went all the way for the big guns- the Iphone 6 plus. It is enormous and I totally hesitated- but every single person I know loves it, so I impulse purchased it. I am mostly excited about the sparkly case I got for it, but second after that is the camera on this bad boy. I think it will encourage me to use my phone camera more when I am with the kids (and it’s going to help my instagram game, I can just feel it!) Although, I must say- I feel a bit like I am holding a laptop to the side of my head when I talk on the phone? I think this will take some getting used to…

Toast with Beet Hummus, cucumbers, tomatoes and olivesSo in celebration of me FINALLY having a phone again, I have another #ToastyTuesday –“not a recipe” for you. So while it’s not a recipe it is indeed the best snack I have had in the last week.

I had leftover beet hummus from school lunches and slathered it on some gf vegan baguette that I had. Then, obviously I had to add crunchy Persian cucumbers. Plus I had cherry tomatoes from the garden and some olives in the fridge. When I had the first bite it was really good, but missing something….

So that’s when I added the shaved red onion, because well, that’s definitely what was missing.

Toast with Beet Hummus, cucumbers, tomatoes and olives

This is the kind of thing I would eat for breakfast, lunch, a late afternoon snack or just in place of dinner when Pete is out of town. I love the color, the textures and the great combo of flavors. It is in fact what I had for dinner last night and then I followed it up responsibly with two of these. Ahhhh……

 

Recipe: Beet Hummus Toast with Cucumbers, Tomatoes, and Olives

Ingredients

  • Toast (I used gluten free and vegan baguette)
  • Beet Hummus
  • Cucumbers, thinly sliced
  • Cherry tomatoes, halved
  • Finely sliced red onion
  • Kalamata and nicoise olives

Instructions

  1. Slather the toast with a generous amount of beer hummus and then top with freshly sliced cucumbers, cherry tomatoes, red onion and olives.

Preparation time: 5 minute(s)

Cooking time: 2 minute(s)

Number of servings (yield): 1
