I know it’s Toasty Tuesday and this isn’t toast. But it’s now officially the Holiday Season and we have a limited amount of time in which to share all of the millions of recipes that you will need to tackle Thanksgiving and the rest of December’s festivities, so we are off to the races with side dishes!

Apple and Bacon Brussels SproutsAnd Brussels Sprouts it is. I had to share them. They are one of my favorite vegetables when they are cooked well and I have made them many many ways– most recently I fried them up for The Pioneer Woman like THIS! But this is a more classic and really easy preparation which celebrates the sweet flavor of fresh autumn apples and the salty perfection of a little bacon for extra flavor. This is a 15 minute dish- so it is seriously perfect to make things easy on Thanksgiving or even just for a weeknight vegetable dish- I love these with roast chicken and so do my kids. Make them pleeease!!!!

Apple and Bacon Brussels Sprouts

Sweet and Tart Apples mix with a bit of salty cripsy bacon to make a perfect fall side dish!
Ingredients
  • 4 strips thick cut bacon, diced
  • 2 apples, peeled and diced
  • 3 cups Brussels Sprouts, halved
  • 1 cup apple juice
  • 2 tablespoons fresh lemon juice
  • kosher salt
Instructions
  1. In a heavy skillet cook the diced bacon over medium-high heat until the fat has rendered, about 5 minutes. Remove the bacon from the pan and set aside.
  2. Add 2 tablespoons of olive oil and the apples and sauté for 1 minute, stirring.
  3. Add the brussels sprouts and stir well, cooking for 2 minutes. Add 1 cup of apple juice and the lemon juice and cook over medium heat for 2-3 minutes. Add the bacon and cook over high heat for 1 minute- the brussels sprouts should be just fork tender (if they are not, give them another minute or two of cooking time. Season to taste with kosher salt and serve hot.
