Coconut Bars with Macadamia Nuts and White Chocolate

For me, this is one of the best desserts I have had in a while. I loooove coconut- like I have a love affair with it. And if you are one of those people that love’s sweet and salty desserts, this is for you.

These are like the perfect hybrid of a flaky shortbread cookie and a cakey blondie. The incredible caramel flavor from the brown sugar and butter, the texture and flavor of the coconut, the crunch of buttery macadamia nuts and the smooth and creamy white chocolate.

These are rich and buttery and totally incredible. Enjoy.

Coconut Bars with Macadamia Nuts and White Chocolate
2 2/3 cup AP flour
2 cups brown sugar
2 tsp baking powder
1 tsp salt
2 cups shredded, sweetened coconut
1 cup butter, cut into chunks
1 ½ cups macadamia nuts
1 bag white chocolate chips

Preheat the oven to 350 degrees. Prepare a 9×13” pan with baking spray.

In the bowl of a food processor, combine all of the dry ingredients.

Add the 1 cup of butter and pulse until crumbly.

Add the crumbly dough to the prepared pan.

By hand, mix in the white chocolate chips and macadamia nuts.

Flatten the dough with a heavy spatula.

Bake the bars for about 40 minutes. The bars will be golden brown on the top.

Let the bars cool completely. When they are all the way cooled, sprinkle with powdered sugar.
Slice (with a very sharp knife!) into bars and serve!
