Second, these are the best waffles. I know that is quite a statement, but it’s totally true. In the GF/no-dairy, no-eggs world- finding a carb that crushes it and can stand up to the “real” thing is hard, but this does the job.

And don’t even let me get fully started on this sauce. Plain syrup is awesome, but Almond Butter Coffee Syrup is NEXT level. As in I licked the plate clean. Not kidding.

I would be delighted to be indulging in this big old plate of waffles and drown it in this syrup combo and then top the whole thing with fresh strawberries because I do like how the fresh bright flavor cuts through the sweetness. Please don’t forget the steaming hot cup of coffee that should definitely go with it!

Waffles with Almond Butter Coffee Syrup (vegan and gluten-free)

Ingredients
  • The Best GF-Vegan Waffles
  • 1 cup unsweetened coconut milk (from a carton)
  • 1 tablespoon apple cider vinegar
  • 2 ¼ cups gluten free all-purpose baking flour (I use Bob’s Red Mill)
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ¼ cup coconut oil
  • ½ cup gluten free beer
  • Almond Butter Coffee Syrup
  • ½ cup almond butter
  • ½ cup brown sugar
  • ½ cup strong coffee
  • 1 cup maple syrup
  • ½ teaspoon kosher salt
  • Optional: fresh cut strawberries to top the waffles
Instructions
  1. Preheat a waffle iron.
  2. In a bowl, combine the coconut milk and vinegar and set it aside.
  3. In the bowl of a standing mixer, combine all of the dry ingredients and then whisk in the coconut milk, beer and the coconut oil and beat until you have a smooth batter.
  4. Spray the waffle iron with coconut oil spray and spoon the batter into the hot waffle iron and cook until golden brown, about 3 minutes. Transfer to a plate and serve hot with hot Almond Butter Coffee Syrup. (Or keep the waffles warm in a 300-degree oven until ready to serve.)
  5. For the Almond Butter Coffee Syrup:
  6. In a small saucepan, combine the almond butter, brown sugar, syrup and salt and gently warm it until the mixture is simmering and the brown sugar and almond butter have melted. Whisk until smooth and then serve hot with the waffles.
  7. I like to garnish with fresh strawberries for a hit of brightness that cuts through the sweetness of the sauce.
