Peach Quesadillas

Peach Quesadillas? I know! This is an unusual combination for a quesadilla, but it is so simple and delicious, I promise this will be a fast favorite. The summery flavors of juicy peaches and fresh basil are complimented by mild, chewy mozzarella and salty Serrano ham. They are all packaged in a crispy little pocket of flour tortillas- mmmm….

I recommend serving these Peach Quesadillas as an appetizer (cut into small wedges and pile on a platter) at an upcoming BBQ or summer party. You can prepare these ahead of time and pile them up in the refrigerator. Then when you have already preheated your grill for dinner- just throw these on before you start your main course.

You could also use an indoor grill or a grill pan, (maybe even a Panini press!) and have equally great results.

By the way, even though I just recommended this as an appetizer- I happily ate it for breakfast the other day!

Peach Quesadillas, serves 4
– 4 Tortillas
– ½ peach
– 1 (¼ lb) fresh mozzarella ball
– 6 slices paper thin Serrano ham (or prosciutto)
– handful of fresh basil
– cooking spray for the grilling

Prepare the grill to medium-low heat.

Thinly slice the peach.

Spray the tortillas on one side with the cooking spray and lightly grill them on one side.

Tear the mozzarella into chunks, and divide the cheese between two of the four tortillas. (place the cheese on the grilled side of the tortilla.)

Divide the peach slices between the two quesadillas.

Place the slices of Serrano ham over the peaches.

Sprinkle the fresh basil leaves over the ham, peaches and mozzarella.

Place the tortillas (grilled side down) on top of the open quesadillas.

Spray the tortilla on both sides before placing on the grill.

Keep it moving on the least hot part of the grill so the tortillas don’t burn.

When it is crispy, flip the quesadilla and grill the other side.

When both sides are crisped and the cheese is melted, pull the quesadilla off of the grill. Cut into four slices and serve hot!
