Ok guys. I am one tired, sleep deprived mama, so I am gonna keep this short and sweet. And donut oriented.

If you are anything like me and have an herb garden in which you have planted mint, then chances are that it is suffocating the rest of your garden and you may or may not be desperate for ways to use it up vs. just hacking it out and throwing it in yard waste because you are so desperate for it to not strangle your roses.

Chocolate and Fresh Mint Donuts

That’s how these delicious little treats were born. These will be the easiest weekend breakfast ever and you will get all kinds of high credit from your family. Try them!!

Chocolate and Fresh Mint Donuts

To make these donuts:

Preheat the oven to 325 degrees and prepare a donut pan with baking spray.

Chocolate and Fresh Mint Donuts

Combine all of the dry ingredients in a medium sized bowl.

Melt the butter in a small saucepan over low heat.

While the butter is melting, whisk together the buttermilk and eggs in a small bowl.

Add the buttermilk/egg combination to the dry ingredients and mix well.

Add the melted butter and stir in.

Finely chop the fresh mint leaves.

Add the mint to the donut batter and mix well.

Spoon the batter into the donut pan.

Bake the donuts for 10 minutes at 325 degrees. Let cool for a minute before turning out onto a cooling rack.

Repeat with the remaining donut batter.

Prepare the chocolate glaze:

Heat the cream to a simmer.

Combine all of the other ingredients in a medium bowl and pour the hot cream over them. Whisk until shiny and smooth.

Dunk each donut half way in the glaze and twist as you remove them from the glaze.

Set back on the cooling rack to set up.

  • -2 cups cake flour
  • -2 tsp baking powder
  • -½ cup unsweetened cocoa powder
  • -1 cup sugar
  • -4 tablespoons butter
  • -1 cup buttermilk

  • -¼ cup fresh mint leaves, minced
  • Chocolate Glaze
  • -1/3 cup cream
  • -¼ cup semi-sweet chocolate, finely chopped
  • -2 tablespoons corn syrup
  • -1 cup powdered sugar
