But I felt compelled to share this recipe with you since I mentioned it on Monday and had so many requests for it.

I can see why, I mean Blue Cheese Biscuits? Come on….. they are ridiculous.

One more reason to make a big old ham this weekend….

Blue Cheese Biscuits

Preheat the oven to 450 degrees. Prepare a sheet pan with parchment or a silpat.

In the bowl of a food processor, combine the flour, salt and baking powder and pulse to combine. Add the butter and blue cheese and pulse to combine. Pour in the beer and pulse until you have a smooth dough.

Transfer the dough to the counter and with a little flour, roll out. Slice the biscuits and transfer to a baking sheet. Lightly brush with milk and sprinkle with a little kosher salt (I used merlot salt).

Bake the biscuits for 8-10 minutes, and serve immediately.

  • -2 cups flour
  • -1 teaspoon kosher salt
  • -3 teaspoons baking powder
  • -4 tablespoons cold butter cut into small pieces
  • -4 ounces crumbled blue cheese
  • -¾ cup beer (I used pacifico)

Instructions
