Halloween is my favorite “Holiday” there is (besides Christmas of course!!) But I will always maintain that I am not into creepy crawly or scary Halloween. I like silly, goofy and cute Halloween. I know I have told you how I feel about the Blair witch…. So I like to stick with glitter spiders, slug juice and fun treats like these decadent and amazing Salted Vanilla Caramel Chocolate Apples. They are freaking amazing.

I will be honest- I made 2 batches of these before I got them right. I messed up a dozen apples before I figured out that maybe it was the wax on the apples that was foiling me. The overcooked caramel just kept sliding off the apples and into a bitter, goopy puddle.

I then read about boiling the apples to dissolve the wax and that helped dramatically- as did the addition of butter to my caramel. But it is really the chocolate and sprinkles that take these awesome apples up and over the edge.

The best part was the sheer delight expressed by my children. They were completely thrilled by these, and frankly, I kind of was too…

To make these Salted Vanilla Caramel Chocolate Apples, this is what you do:

Bring a large pot of water to a boil. In batches of 2-3 apples at a time, boil the apples for 1-2 minutes. Strain the apples out and vigorously rub them with a paper towel to remove the wax from the apples. Shove the sticks in the top of the apples.

In a large shallow pan or pot add the sugar, the salt and the vanilla and butter and stir over low heat as everything melts. This can take 20 minutes.

Add the cream and stir until the caramel is smooth and melted, another 5-10 minutes.

Transfer the caramel to a bowl so that it can cool slightly and so that it is deep enough to submerge the apples in.

Place the caramel dipped apples on a sheet pan covered in a silpat or parchment paper.

When you have dipped all of the apples put the sheet pan in the refrigerator and let them chill while you prepare the chocolate.
Microwave both types of chocolate and stir until each are smooth. Dip the caramel apple in dark or white chocolate and immediately cover generously with sprinkles.

If you desire then drizzle the tops of the apples with the remaining chocolate. Slice and serve or refrigerate until you are ready to eat it!

  • 8 large lollypop sticks or popsicle sticks
  • 2 cups sugar
  • 1 teaspoon kosher salt
  • 1 tablespoon vanilla extract
  • 2 tablespoons butter
  • 1 cup cream
  • 8 ounces dark chocolate, chopped into small pieces
  • 8 ounces white chocolate, chopped into small pieces
  • 2 small bottles sprinkles, assorted
