We have a had a nice quiet weekend here after I was gone all last week. We have been logging serious family time and I am totally trying to soak up this Christmas with the kids being this age. I feel like I just have a few more years to enjoy this really innocent, sweet age where they endlessly believe in the magic of Christmas. It is all about elves and Santa and wishing that it would snow (the odds aren’t good about the snow.)

I also took quite a trip to petco with Pia today. I have become a freak and I bought wilbur a reindeer costume. When I put him in it Pete just stared at it and then wen’t back to working. He couldn’t really say anything, but it was clear he isn’t into it. Spoiler alert mom!!! Pia bought Missy (my moms dog) the craziest outfit ever. it is a pink fluffy coat with a hood and pink crystals. It was either that or a Mrs. Claus outfit. If any of you dress up your dogs in Christmas Costume please tell me, or better yet, send me a picture!

Nutella Rolls with Coffee Glaze

But one of the highlights of the weekend was baking with Pia. She is going in for another round of really cohesive food allergy testing tomorrow morning. But in order to accurately assess someones reactions to foods they have to ingest the foods before they are tested for them. So basically Pia got to have a free-for-all on her suspected allergic foods this weekend, and I let her pick whatever she wanted. This is what she chose. Nutella Cinnamon Rolls.

She has great taste. I used this super easy yeast dough as the base, and then slathered an entire container of nutella over the dough. We rolled it up and baked the rolls and then slathered them in a lovely coffee glaze. They were fluffy and chocolatey and the coffee and chocolate were the perfect topping. I am sharing these with you because I fell liek they would be a gorgeous treat for Christmas morning. Enjoy these courtesy of Pia!

To make these Nutella Rolls with Coffee Glaze, this is what you do:

When the dough is finished rising, preheat the oven to 375 degrees and prepare a sheet pan with a silpat or parchment paper.

Dust the countertop with a tiny bit of flour and roll the dough out into a big even rectangle.

Spread the nutella evenly over the top of the dough.

Gently roll the dough and nutella up into a log.

Slice the log into 12 rolls. Place them on the sheet pan and brush them all with the melted butter.

Drape a kitchen towel over the top of the nutella rolls and let them rise for 30 minutes. Bake the Nutella rolls for about 15 minutes or until golden.

Take them out and transfer them to a cooling rack. While they are cooling make the Coffee Glaze.

Whisk the coffee glaze ingredients together in a small bowl and drizzle the glaze over the rolls. Let them set up and then serve immediately.

  • 1 recipe Clover Leaf Roll Dough
  • 13 ounces nutella
  • 3 tablespoons butter, melted
  • Coffee Glaze
  • 3 cups powdered sugar
  • 2 tablespoons strong coffee
  • 2 tablespoons cream
  • pinch of salt

Instructions

  1. When the dough is finished rising, preheat the oven to 375 degrees and prepare a sheet pan with a silpat or parchment paper.
