I can’t believe it is Thursday. This is the last week of school so it has been crammed with fun stuff for the kids which has been adorable and sweet, but also I have a mountain of work that has piled up since I have been so busy with other stuff and now I am in total panic mode.  This is one of those weeks that lasted forever and dragged at the same time,  you know what I mean!? Also, I somehow (and don’t ask me how because I don’t even have a remote clue) seem to have been attacked by Poison Oak on my right lower leg. It is really, really red and angry. And no it doesn’t itch, it just really, really hurts. I am on Prednisone but I am all open ears if you know of any old family cures??

So this has been a long week topped off by POISON OAK!!!!??? And these my friends, are the kind of weeks when Thursday is particularly Thirsty. So #ThirstyThursday is back with a delectable Apricot Lime mojito that will bring relaxation to even the most insane of your days.

I absolutely love the tartness of Apricots, and when I made this homemade apricot puree it reminded me of my very favorite sweet apricot preserves. When it is combined with the fresh lime juice and the rum and mint- this is out of this world. Try one!!

Apricot and Lime Mojito

Recipe: Apricot Lime Mojito

Ingredients

  • 1/4 cup apricot puree
  • 6 fresh mint leaves
  • 1/2 lime, sliced in wedges
  • 2 ounces white rum
  • 2 ounces chilled club soda
  • Apricot Puree, makes 2 cups
  • 4 apricots pitted and chopped
  • 1 1/2 cups water
  • ½ cup sugar
  • pinch of salt

Instructions

  1. Instructions
  2. For the Apricot Puree:
  3. In a small pan, add the Apricot, water, sugar and salt. Cook for 3-5 minutes until thickened. Add to the jar of a blender and puree until smooth. Chill.
  4. For the Mojito:
  5. In the bottom of a heavy drinking glass, combine the mint and lime wedges, using a muddler to smash them all together and release some of the mint. Add the apricot puree, rum and club soda and stir to combine. Serve immediately.

Preparation time: 10 minute(s)

Cooking time: 5 minute(s)
