So I am juicing a little. Today is my second day, which means my brain doesn’t quite fire on all cylinders. I’m not even hungry, but my brains a little, uhhhh, buzzy? Kind of jumping around a lot- weird. I decided that instead of doing one big cleanse two weeks from now, that I would do a little each week and then maybe by the time I go on vacation I wouldn’t be so “hangry” that no one wanted to go on vacation with me, but would, in fact fit into a bathing suit. Or at least sort of. Ah… the joys of writing cookbooks!

Chicken, Mint and Strawberry Salad

So this light, beautiful and fresh salad is just what I will be eating when I break my juicing. Whether you are trying to eat light after a night of downing pints of Guinness, green beer or some kind of chocolate drizzled irish whiskey milk shake, or just enjoying the emerging flavors of our just around the corner Spring, this salad is just the thing.

The tender butter lettuce and sweet mint contrast with the macerated Strawberry vinaigrette and the bite of shallots. The Chicken makes it a meal, (and it has been my tasty lunch quite a bit lately.) Hope you enjoy!

Chicken, Mint and Strawberry Salad

 

Recipe: Chicken, Mint and Strawberry Salad

Ingredients

  • 1 head butter lettuce, torn into bite sized pieces
  • 1 cup fresh mint leaves
  • 2 cups shredded precooked chicken
  • 1 cup strawberries, thinly sliced
  • 1 shallot thinly sliced
  • Macerated Strawberry Vinaigrette
  • 2 strawberries, minced
  • ½ teaspoon sugar
  • pinch of kosher salt
  • 1 garlic clove, minced
  • 3 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • kosher salt

Instructions

  1. In a small bowl, combine the minced strawberries with the sugar and the pinch of kosher salt. Set aside.
  2. On a platter or in a serving bowl, arrange the lettuce, mint, chicken, fresh strawberries and shallot.
  3. Add the garlic, red wine vinegar and olive oil to the minced strawberries and mash everything together. Season with kosher salt and drizzle over the salad.
