Hi Guys!!! I hope you all has an amazing Easter? If you have been following me on instagram, you would know that we are mid-family vacation in Hawaii right now and I couldn’t be happier to have escaped real life for a few days.

We are vegging big time. In fact, other than to text my family who are at the house with Wilbur and to take instagram pic’s, I haven’t touched technology. Oh, except my kindle and the remote control- but I don’t think that counts.

Soy Sesame Maple Pork Tenderloin

Mostly I have been camped out by the pool drinking like a fish while the girls swim like fishes. Please don’t judge me, with all of the tropical cocktails they have going on here and things like fresh coconuts, cut in front of you and filled with rum- it’s sort of impossible to not. Plus- when I tell you Pete and I needed a vacation, I was not just saying that- it has been an epic 6 months of work and I was fried out to the max when I got here.

So with just a couple days left, I think we are going to hit the beach and watch for whales and sea turtles- also I totally projected and signed the girls up for all these cool classes like tie-dying and henna tattoos really just so that I can do it too- I love stuff like that and I felt it would be awkward to just show up myself, right? Oh, and don’t let me forget that we are eating a lot! (I am taking notes on the food and most definitely on the cocktails so I can share when I get back!

I love that here in Hawaii there is so much Pacific Rim influenced food. Tons of Asian flavors, which are some of my favorite. Which reminded me that I should share this recipe with you for the most delicious Soy Sesame Maple Pork Tenderloin
EVER!!! I have made this several times and marinated it anywhere from 2 hours to 12 hours- both ways it was awesome, obviously, it was just a little bit more deep in flavor with the longer marination time. Plus I love the flexibility. This is fantastic just on a regular night- but if you were having guests it makes it so that you can prepare the bulk of your main dish up to a day ahead of time, or easily put it in to marinate first thing in the morning making the last minute cooking no big deal. Ok- I will leave you with the recipe as I hear a mai-tai calling my name…

 

Recipe: Soy Sesame Maple Pork Tenderloin

Ingredients

  • Marinade
  • ½ cup torn fresh cilantro
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 1 jalapeno, rough chopped
  • 2 tablespoons sesame oil
  • 2 tablespoons gluten free Hoisin Sauce (labeled “natural”)
  • ¼ cup Gluten free Soy Sauce
  • ¼ cup pure maple syrup
  • 1-1.25 pound Pork tenderloin
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Place the marinade ingredients in a large Ziploc bag. Add the pork tenderloin and marinate at least 2 hours and up to all day.
  2. Preheat the oven to 375. Heat a heavy oven proof skillet over high heat until it is smoking.
  3. Remove the Pork tenderloin from the marinade (but reserve the marinade still in the bag) and sear it in the pan on all sides. This will take about 6 minutes. Add the rest of the marinade to the pan and cook for 1 minute. Add 1 cup of water and stir around and then place the whole skillet in the oven for 15 minutes.
  4. Remove the pan from the oven and let the pork tenderloin rest for 10 minutes.
  5. Slice the tenderloin and drizzle with a little of the pan sauce and then sprinkle with the sesame seeds and serve.

Preparation time: 15 minutes plus marination time

Cooking time: 25 minutes

Number of servings (yield): 4
