There is the most gorgeous Rhubarb in the stores and the farmers markets right now! I planted some in my garden, but it is not quite what I would call bountiful right now. In fact, it’s looking a little sad. (Anyone have rhubarb gardening tips?)

Anyways, I practically bought a bushel of rhubarb I love it so much and when I had a few stalks left over, I decided to make a drink just for you! Rhubarb Mojitos. Sweet, sour, minty and refreshing. SO GOOD.

With Mother’s Day around the corner, and lots of other fun Spring events coming up, it is always good to have a pretty (and delicious) seasonal cocktail in your arsenal!

Rhubarb Mojitos

 

Recipe: Rhubarb Mojitos

Ingredients

  • 1/4 cup rhubarb puree
  • 6 fresh mint leaves
  • 1/2 lime, sliced in wedges
  • 2 ounces white rum
  • 2 ounces chilled club soda
  • Rhubarb Puree, makes 2 cups
  • 2 stalks rhubarb trimmed and chopped
  • 1 1/2 cups water
  • 1 cup sugar

Instructions

  1. For the Rhubarb Puree: In a small pan, add the Rhubarb, water and sugar. Cook for 10 minutes until the rhubarb is soft. Add to the jar of a blender and puree until smooth. Chill.
  2. For the Mojito:
  3. In the bottom of a heavy drinking glass, combine the mint and lime wedges, using a muddler to smash them all together and release some of the mint. Add the rhubarb puree, rum and club soda and stir to combine. Serve immediately.

Preparation time: 10 minute(s)

Cooking time: 5 minute(s)
