I haven’t shared a toasty Tuesday with you guys in a couple of weeks, but the toast is back!

And today we have the Ultimate Veggie Toast! Layers of toasty chewy baguette, garlicky hummus, creamy avocado, juicy tomato and a crisp hearty little salad with the bite of fresh shallot and red wine vinegar.

Ultimate Veggie Toast

I also happened to see this snippit about broccoli sprouts recently and how they have more phytochemicals in a tablespoon of sprouts than in a cup of whole broccoli. (That is all the good stuff that helps protect against disease by the way). Right after I read about these little gems, I found them at the grocery store, so now I am trying to throw them on everything. Ultimate Veggie Toast

I think that all of the textures and the really tasty flavors from the homemade hummus (although totally use store bought!) make the toast amazing. I hope this finds its way to your lunch or snack plate soon!
