Pia and I spent 3 hours cleaning out our garage Tuesday afternoon which looked a tiny bit like something out of hoarders. There had to have been somewhere in the neighborhood of ten million spiders that tried to crawl on me and my scalp is still all itchy and creepy-crawly (you know like after you garden or clean out your gross garage!?) all this time later- yeeeaaaak!

And then we needed snacks! We were starving, and I was so grateful that I had a batch of these Chewy Chocolate Coconut Almond Granola Bars that I made this past weekend. I had to down one while making dinner to chase away the Hangry.

Chewy Chocolate Coconut Almond Granola Bars- Vegan and GFThey are crispy and chewy and chocolaty with gluten free oats and crunchy almonds. They are everything delicious and I love that they are gluten free and vegan and I love even more that my kids LOVE them. I make these in double batches and then I cut them and wrap the individual granola bars in wax or parchment paper and freeze them all in a Ziploc. It makes it so easy to grab them for snacks or lunches (they thaw by the time the kids take them out at lunch!) Chewy Chocolate Coconut Almond Granola Bars- Vegan and GF

Crispy Chewy Chocolate Almond Coconut Granola Bars

Ingredients
  • 2 cups gluten free oats
  • 2 cups chocolate puffed rice cereal
  • 1 cup shredded unsweetened coconut
  • 1 cup toasted almonds
  • 1 cup almond butter
  • 1 cup agave
  • 2 tablespoons coconut oil
  • ½ teaspoon salt
  • ½ cup chocolate chips (I used vegan)
Instructions
  1. Preheat the oven to 325 degrees, and prepare a 9x13x1” pan with a sheet of parchment paper.
  2. In a large bowl, combine the oats, cereal, coconut, almonds and the almond butter, agave and coconut oil and mix until the oats are well coated. Add the kosher salt and the chocolate chips and mix to combine.
  3. Transfer the granola to the prepared pan and spread it out over the pan evenly, pressing it down with the spatula.
  4. Bake the granola bars at 325 degrees for 30 minutes and then press down hard with a spatula.
  5. Bake the granola bars for another 20 minutes.
  6. Let them cool completely before slicing them into bars. Drizzle with additional melted chocolate if desired.
