Happy Monday!! Wow what a weekend ladies and gentlemen. I am writing this on Sunday night after three days of Heathermade Costco Roadshows and I am beat. But also excited! We sold out at two of the stores and just about at the third, so it was such a wonderful validation of how interested (and in many cases over the moon) people are for these kinds of products. I love it that so many of you are taking care of yourselves and trying to eat foods that make your body happy!

This salad is so good that I had it twice last week and I think I will make it again this week. I always a love a great Asian inspired salad, but the addition of sweet juicy nectarines are not only wonderful in the salad on their own- but in the dressing they are incredible. I enjoy a little sweetness to a salad dressing, especially with the ginger, and I love how the beautiful sweet seasonal fruit does that naturally.

Nectarine Ginger Sesame Chicken Salad

Ingredients
  • Salad:
  • 1 head Nappa cabbage, shredded
  • 1 cup loosely packed fresh mint leaves
  • ½ cup thinly sliced seedless cucumber
  • 1 small ripe avocado cut into chunks
  • 4 green onions, thinly sliced
  • 1 red bell pepper, seeded and thinly sliced
  • 1 nectarine, thinly sliced
  • 1 red fresno chili, thinly sliced
  • 2 cups shredded cooked chicken breast
  • toasted and black sesame seeds
  • Nectarine Ginger Sesame Dressing
  • 2 cloves garlic
  • 1 inch peeled ginger, chopped
  • ½ nectarine cut into chunks
  • ¼ cup sesame oil
  • ¼ cup rice wine vinegar
  • kosher salt
Instructions
  1. Arrange all of the salad ingredients on a platter or toss together in a bowl.
  2. For the Nectarine Ginger Sesame Dressing: Combine everything in the jar of a blender and puree on high until smooth. Season to taste with kosher salt and then drizzle the salad with the dressing and toss to serve and then sprinkle the sesame seeds over the top.
