With only a few more weeks of Summer left, all the bounty of the season is 100% in full swing. The colors! The flavors!! I have to get my fill and then some so I don’t fall into some kind of a produce induced depression come fall.

At least in the Pacific Northwest we tend to have a late summer. As in, late to start and late to end. We usually go right to the edge of October and then directly fall into Autumn. So I can look forward to munching all the good stuff for a little while longer.

Also, this is what I was supposed to be eating all weekend before my Photoshoot which was yesterday, but instead all I wanted was chips and Guacamole. Murphy’s Law right? And of course, now that it won’t matter, let me try to get my kale cravings under control! Adding this rainbow of fruits and veggies with a spicy Peach dressing makes for an insanely fresh and delicious Salad- the perfect Summer Meal!

Kale Summer Salad with Peach Jalapeno Dressing

Serves: 2-4
 
Ingredients
  • 1 head curly kale, stems removed and finely chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup blueberries
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 1 peach, sliced into wedges
  • 3 green onions, finely sliced
  • 1 avocado, cut into chunks
  • Peach Jalapeño Dressing:
  • 2 cloves garlic
  • 1 jalapeno with seeds
  • 1 peach, cut into chunks
  • ¼ cup olive oil
  • ¼ cup rice wine vinegar
  • kosher salt
Instructions
  1. In a large bowl or platter arrange all of the salad ingredients.
  2. For the dressing add the garlic, jalapeno, peach, oil and vinegar in the jar of a blender and puree on high until smooth. Season to taste with kosher salt.
  3. Toss the salad with the dressing, season with kosher salt and serve immediately.
