I am happy that we are talking about Thanksgiving on the blog today. Because there have been some hard things going on lately, and combined with the stress of the election on Tuesday, I am finding it incredibly important to be thankful for all that we have and most especially for the health and love of family.

Someone tried to steal Wilbur at the end of last week, and while he did not succeed, he brutalized my little baby physically. We had to bring him to the doggy ER and he was on heavy pain-killers and not leaving bed for a few days. But I am happy to report that he is up and doing quite well today and while I fear we have a long road with physiological healing, his body seems to be doing much better.

So, now we are feeling especially appreciative of our little guy, and it has been one of those moments in life where we are reminded to cherish those we love.

And Thanksgiving dinner is one of the ways that I show my family how much I love them- this meal is so symbolic and special and probably my favorite of the year.

This is the first dish that I am sharing with you from my Asian Inspired Thanksgiving Dinner Menu. This Honeycrisp, Daikon and Cucumber Sesame Salad is so light , crunchy, refreshing and completely delicious! It’s a great contrast to rich sauces and complex flavors. It’s also very pretty, a real showstopper on the table.

(I would also serve this alongside grilled salmon for really healthy and tasty dinner.)

Honeycrisp, Daikon and Cucumber Sesame Salad

Ingredients
  • 1 honeycrisp apple, thinly sliced into strips
  • 1 large daikon radish, peeled and thinly sliced
  • 6 persian cucumbers, thinly sliced
  • 1 fresno chili, thinly sliced
  • ¼ cup rice vinegar
  • ¼ cup toasted sesame oil
  • ½ cup fresh mint leaves
  • 6 fresh shiso leaves (if available)
  • ¼ cup pomegranate seeds
  • ¼ cup toasted sesame seeds (black and white)
  • kosher salt
Instructions
  1. Combine the apple, daikon, cucumber slices, and fresno chili and toss with the vinegar and oil. Then gently add and combine the mint and shiso (if using) and sprinkle the pomegranate and sesame seeds over the top of the salad. Serve immediately.
