Yogurt Parfait
This is something so sweet and delicious for breakfast. However, you also manage to sneak in some nutritional value!
This parfait used the late summer (well, I guess early fall now) fruit that is still bountiful at all of the markets and at the store.
It also used beautiful, thick Greek yogurt and homemade granola (check out Granola I 1/09 or Granola II 5/10). So you get the smooth, cool creaminess from the yogurt, the crunchy sweetness of the granola and the tart freshness from the fruit.
Yogurt Parfait
¼ cup blueberries
¼ cup nectarine slices
½ cup granola
½ cup Greek yogurt, (I used honey flavored “Greek Gods” brand)
Place half of the yogurt in the bottom of a glass, and then pile half the nectarines, and half the blue berries on top of the yogurt.
Pile ¼ cup granola on top of the fruit.
Repeat the layers with the following yogurt, fruit, and granola.
