Every Summer gathering feels like it call for a delicious dessert. So whether you make it celebrating seasonal Summer fruit or beat the heat with some indulgent frozen treats, I just feel like you gotta go for it!
Knowing that the Fourth of July is around the corner and a whole host of other fun gatherings, I thought I would share ten of my favorites. Full disclosure, I can’t eat most of these anymore without major substitutions (because of food allergies) but please-o-please won’t you enjoy them for me!? And if you do have allergies or like to eat gluten free or vegan- please dig into a double batch of the amazing fruit crisp below- it will truly knock your socks off, allergies or no!
Raspberry Crisp (Gluten Free and Vegan)
Did I do it justice in the description above? This is a case of a gluten free/vegan recipe being better than the original. truly.
Deep Dish Blackberry Peach Pie
Because who doesn’t need tons and tons of gorgeous fruit piled into flakey pastry dough?
Chocolate Coffee Ice Cream Sandwiches
Oh, how I miss coffee. And Ice Cream. (and a lot of other things). But this was a really a case of the best of all worlds put right into a nice neat little package. Amazing- and of course you could sub out other flavors of ice cream as well..
Um. It’s s’mores and ice cream and chocolate ganache and brown butter graham cracker crust in one. I could weep.
This was an awesome and delicious twist on a classic cobbler. The coconut and almond lends more depth of flavor and texture and is really nice with the juicy peaches!
I have reconciled that there is no way to mimic angel food cake with no eggs. But I can almost still taste and fell it in my mind! Best ever- just like this super easy summer berry trifle that uses angel food cake as it’s fast and perfect base.
Well this is more time consuming- but just look at the wow factor!
Chocolate Zucchini Coconut Cake with Coffee Glaze
On elf those glorious combinations of being easy and insanely, outrageously delicious. If you make one chocolate dessert this year to make people go wild- this should be it.
Strawberry Rhubarb Sugar Cookie Crisp
A flakey, fragrant, sweet and buttery sugar cookie becomes the crust in this twist on a classic crisp or cobbler. Filled with strawberries and rhubarb, it is AMAZING!!!
I have a raspberry version of this as well that has been beyond popular for years. It is so easy you will almost not believe it and this is a personal family and friend top desserts of all time!

I just recently made the lemon blueberry cake, and it is amazing. It’s refreshingly simple, old-fashioned (in a good way) and delicious. It is absolutely one of Heather’s ten best desserts. Serve a slice with a powdered sugar and a spritz of whipped cream mixed with a bit of lemon curd if you want to fancy it up a bit.
