So, so , so , so good. We had spicy tacos Wednesday night (coming your way next week) and this was the most wonderful compliment to the spicy food. Its sweet, tart and refreshing- you will love it!
Limeade is something that I love. My mom is obsessed and always has been and she used to make big pitchers of it and we would drink it until our faces puckered up! So when I found two big bowls of limes sitting on the counter I thought I would make some. But I also had strawberries that were thinking about going bad, so it tuned into strawberry limeade. BUT! Right before I added water to my super sweet and sour mixture, I saw an icy cold carton of coconut water staring at me from my fridge- so in that went instead- and YAAASSSSSSS. It was the right choice. The only thing that could make this better would be a big glug of vodka. Or maybe rum? What do you think? What liquor would you add?
- ¼ cup sugar (I used organic beet sugar)
- ½ cup fresh squeezed lime juice
- 1 cup fresh strawberries
- 2 cups coconut water
- ice and fresh mint for serving
- In the jar of a blender combine the sugar, lime juice and strawberries and puree on high for a few seconds. Add the coconut water and puree on high speed.
- Fill glasses with ice cubes and pour the limeade over the ice. Garnish with mint.
