My sister in law Natalie made a big mouthwatering batch of pulled pork last weekend. Like crazy good pulled pork.

And there were leftovers, which I greedily took home to my house. And while I die over a good pulled pork sandwich or a great batch of carnitas, I have had chili on the brain. Chili Verde specifically.

Now you may look at this chili and say “hey! That’s not green!” and you would be right- but it is made with green salsa. And green salsa is made with green tomatoes, green onions, green tomatillos, green chili’s and green cilantro. Oh, and green lime. So that sounds pretty green to me.

Plus, who cares? Cause it is really, really, really good.

To make this Pork Chili Verde:

In a large heavy pot, heat the vegetable oil over medium heat and add the onion. Sprinkle with kosher salt and let cook until soft and translucent.

Add the pulled pork to the onion and cook about 5 minutes.

Add the salsa verde to the pork and onions and simmer together.

Rinse and drain the white beans.

Add the beans to the chili.

Add the chicken stock, put a lid on the chili and simmer for an hour.

Add the cumin and chili powder and then season to taste with kosher salt.

Garnish with green onions and cilantro and serve immediately.
