Hi guys! Happy Sunday! It’s actually my birthday today (gaahhh!!!) and I am in the middle of a celebratory slug fest. Like I am vegging alllllllll day. I slept in (until 7:40) very late for me. And then I vegged in a chair down stairs and now after a big lunch of crispy chicken tacos (yum) I have moved my veg to bed. And that is where I will stay, watching movies until my family comes over for the Seahawks game and to eat gluten free vegan pizza. It’s basically a perfect day.

Sort of like today is the perfect combo of my favorite things (vegging, movies and tacos) this snack is a perfect combo of crispy kettle corn, melted chocolate and crunchy minty candy canes.

While most of you won’t be all day lounging like me today, there is no doubt that there will be some serious family and friend movie watching/couch crushing going on over the next week. And when you settle in, this is the perfect fast and easy treat to serve up. It’s so delicious and addictive and the fast addition of chocolate and candy cane make for an indulgent and festive seasonal treat you will make over and over again!

 

Recipe: Chocolate Candy Cane Kettle Corn

Ingredients

  • ¼ cup coconut oil
  • 
½ cup popcorn kernels
  • ¼ cup white sugar
  • 
kosher salt
  • 1 cup chocolate chips (I used, vegan, soy and gf chips)
  • 3 candy canes, crushed

Instructions

  1. In a large pot, heat the oil over medium low. Add the popcorn kernels and let them heat for a minute (before they start popping) and then sprinkle the sugar over the kernels and put the lid on.
  2. Constantly shake the pot so that the sugar doesn’t start to burn.
  3. Let the popcorn pop until the pops are a few seconds apart, and then immediately pour out onto a sheet pan and lightly salt.
  4. Let the popcorn cool slightly.
  5. Melt the chocolate chips in a microwave in a heat proof bowl and drizzle the chocolate all over the popcorn and sprinkle with the crushed candy canes.
