I Hope you all had an absolutely wonderful Christmas Holiday!
Ours was more low key than usual, which was welcome. In fact, it was so low key that it feels like I have been on vacation for ages.
I didn’t even have to cook you guys!? Like besides a big breakfast and bringing a few dishes to my parents on Christmas night- it’s been nada for most of the week. We went out for every meal. Every single one- unless it was a smoothie.
And I am happy to have a muffin top to show for it.
But here it is Sunday, and for the first time, I really wanted to cook. So a big pot of Spicy Beef Chili has been simmering away all day while my family watched the Seahawks game with manic excitement. (Can you blame us!? It is SO exciting!!!)
But in order to get through a game like that, and to plow through an entire pot of chili, you need something to drink. Since I had just run into the first of the gorgeous blood oranges at the grocery store and we have a fridge full of pomegranate juice, so that became the base of this drink. And after the chowing down that has been going on the last week, I thought doing a skinny variety with agave may be in order?
The result is a really refreshing and not overly sweet margarita that also happens to be really a show stopper in color. They were so good that I am now planning to make a batch of these on New Years Eve while we have “Game Night” with our friends- they are too tasty not to share!
Recipe: Skinny Blood Orange Pomegranate Margaritas
Ingredients
- Sugar or salt (depending on your preference)
- ½ cup Pomegranate juice
- 1/2 cup Blood Orange Juice
- 1/2 cup Fresh Lime juice
- 1/2 cup Tequila Blanco
- 4 tablespoons gave
- Ice
Instructions
- Drag a cut lime or blood orange around the rim of the 4 glasses. Dip the rim in sugar or kosher salt, depending on your preference.
- To make the drink, combine ice, the agave, the pomegranate, blood orange and lime juice and the tequila in a cocktail shaker. Shake vigorously and then pour into a chilled ice filled glass. Garnish with blood orange and pomegranate seeds.
