Who is ready for the weekend? Um, I know you can’t see me, but my hand is waiving wildly around in the air. WILDLY.
I need a weekend. I need to see my hubby and my darling kids (not when I am dragging them to school and sports or screaming for them to get dressed or go to bed) and I need to R-E-L-A-X.
Oh, yeah. It’s only Thursday, isn’t it? But that at least means it #ThirstyThursday!! And happily I have paired up with Pacific Foods to bring you a very special drink to enjoy this coming weekend, or just well, right now.
Coconut Iced Coffee, a little gulp of heaven on earth that goes as perfectly at brunch or as an afternoon pick me up (without the rum obviously!!) as it would for hot summer evenings when you add a shot of Rum to make things interesting! In fact, I made this for Pete for dessert this past week since he has no problem drinking coffee before bed and he was happy as a clam.
Great dark roast Coffee, a little coconut sugar to keep it lightly sweet and luscious Organic Original Coconut Non-Dairy Beverage to make things creamy. And when I want to make it really decadent I top it with a few tablespoons of whipped coconut cream and top it with toasted coconut. Um. Yes please.
Recipe: Coconut Iced Coffee
Ingredients
- 1 cup strong hot coffee
- 1 tablespoon coconut sugar
- 1 ½ ounce shot of good rum (optional)
- ¼ cup Pacific Foods Organic Original Coconut Non-Dairy Beverage
- 2 tablespoons toasted coconut
- Whipped Coconut Cream (optional)
Instructions
- Brew your cup of hot coffee and stir in the sugar to dissolve. Set it aside to cool slightly.
- Fill a large glass all the way with ice cubes and then pour the rum over the ice.
- Add the coffee to the ice and then the Coconut Non-Dairy Beverage. Top with whipped coconut cream if desired and then sprinkle with toasted coconut.

Oh this is too good! I hear you about needing a weekend. This has been the first week of summer for us and I’m not sure I can deal with both my children without a few strong cocktails. 🙂

Hi WIllow- not silly at all. My favorite way is to get a can of unsweetened coconut cream and whip with electric beaters a little powdered sugar into it and maybe some vanilla. It will be like a wet whipped cream. But if you chill it in the refrigerator after that, it gets much more firm like really whipped cream!
