I have a cocktail and a dessert for you today- because we are CELEBRATING!!!

My Heathermade fresh baked goods launch in select Costco’s today and I am out of my mind with excitement!

Cosmopolitan Sorbet

 

And excitement like this equals two things for me: A drink and a treat. This is both. I haven’t had a “cosmo” in ages, but I can’t really imagine why? Sex and the city made this combo of ice cold vodka, cranberry and lime super star famous and with good reason- it’s amazing. So when I was recently thinking about making some kind of fall sorbet and cranberry was a natural solution- I just felt that we should also add some booze to it- which led to the cosmo conclusion. Don’t worry- this is not blatantly boozey- but I did find it detectable- which I like by the way ☺ And holy cow- isn’t it so pretty!! I love the color and the fresh little sprinkle of lime zest on top- it’s so festive. I feel like it is just all about the Holidays- and wouldn’t this be a fun dessert for friends!?

Cosmopolitan Sorbet

Ingredients
  • ½ cup sugar
  • ⅔ cup water
  • 12 ounces fresh cranberries
  • 3 tablespoons vodka
  • ½ cup fresh lime juice
Instructions
  1. In a medium pot, heat the sugar, water and cranberries. Bring to a boil and then cover the pot and simmer on lowest heat for 15 minutes until the cranberries are completely soft.
  2. Remove from the heat and cool to room temperature. Once the Cranberries have cooled, puree the mixture on high and sieve through a fine mesh strainer.
  3. Whisk the liquid with the vodka and the lime juice and chill in the refrigerator.
  4. Freeze the sorbet in your ice cream maker according to manufacturers directions.
  5. Transfer to a freezer friendly container and freeze for at least 4 hours. Scoop and serve.
