I have something so fun to share with you today!
My friend Julie wrote a book called Dinner for Two! It is based on her blog, and the book and I think it is so clever because there are tons of families that are made up of two people and it can be hard to cut recipes down. I am going to pick up a copy for my mom who is really just cooking for two most of the time, since she was already eye-balling a lamb shank recipe in there.
I knew that I wanted to chose a recipe from the book to share with you and how could I not choose “Holy Yum Chicken!”? I mean- it was so obvious. This is one of the most popular recipes from Julie’s blog and I’m sure it will be a favorite amongst her book recipes too. And yum it was- and also SO EASY. This is a perfect week night dinner. We had it with roasted potatoes and green salad and the kids loved them.
So below is the recipe for this wonderful chicken and then I also am giving away a copy of Julie’s Book this week! *I have to note that in the original recipe there is 1 tablespoon of white vinegar. I added an extra tablespoon of vinegar and used apple cider vinegar. I also baked the rosemary with the chicken, and normally you would add it after the cooking. You can find the original recipe HERE.
- ⅔ cup Dijon mustard
- ¼ cup +1 tablespoon pure maple syrup
- 2 tablespoons apple cider vinegar
- ½ teaspoon kosher salt
- ¼ teaspoon fresh cracked black pepper
- 1.5 pounds skinless boneless chicken breast, diced into ½ inch pieces.
- 2 fresh rosemary skewers
- 7-8 wooden skewers (a couple of inches trimmed off the bottom of each)
- Preheat the oven to 425 degrees. Cover a 9x13” pan in two sheets of aluminum foil
- In a small bowl, whisk together the Dijon, maple syrup, vinegar, salt and pepper.
- Skewer the chunks of chicken breast, they should make 7-8 chicken skewers. Lay them in the 9x13 inch pan. With half on one side and half facing in the other direction.
- Slather them with half of the sauce. Pick the rosemary apart and sprinkle in with the chicken skewers.
- Roast the chicken skewers, basting them every 15 minutes with the remaining sauce and then flip the chicken so they cook evenly.
- Cook for 35 minutes and then turn the temperature to broil for 5 minutes.
- Cover the chicken with any sauce remaining in the pan or the bowl and scrape the rosemary over the chicken. Season to taste with kosher salt.

My favorite easy weeknight meal is breakfast for dinner.
We usually have a chef salad at least once a week, along with what we call Roast puffs ( Roast placed in a biscuit along with chopped onion and mozzarella cheese) cook them in the ovenand warm up the roast gravy to pour over top.
Our standard “go-to” for a quick dinner is pasta. I can whip up a basic marinara sauce in about 30 minutes, cook some noodles and be done!
These look delicious! I’m always cooking for two and we are horrible at eating leftovers so this book is definitely in my future!
Homemade pizza! I always have a few balls of pizza dough in the freezer. I just pull them out to thaw during the day and then dress them up with whatever toppings we are feeling for dinner.
Its terrible but the frozen talipia from costco pan fried with lemon pepper and roast broccoli. Its totally lazy and easy but its the fastest dinner that is whole-healthy food.
Popcorn with lots of butter and salt!
I love making spaghetti and meatballs! A quick put together sauce (dare I say it) and some good frozen meatballs and a dish is put together in no time!
We usually have some variation of pork tenderloin sliders each week. Easy to make and my son eats them without complaint!!
My favorite weeknight meal is a one pan thing of roasted sausage, broccoli, fennel, and potatoes with lemon zest and mustard. So tasty!!!
Ive made a few different variations of meatloaf lately, which is a nice easy dinner with potato and veg!
I would have to say our easiest weeknight meal would be eggs and toast.

Can’t wait to try this looks so good!! I am on a fajita kick. We make them once a week and change the meat out each week. One week its chicken then steak then pork etc. So quick and an easy clean up 🙂 yummy!!
I love the idea of a dinner for two cookbook! My husband and I love to cook together. Our favorite quick weeknight meal would be “fancy” grilled cheese.

My favorite weeknight meal is anything I can throw on a sheet pan and cook all together. Fish and veggies, chicken, potatoes and broccoli. Or anything I can whip together from rotisserie chicken, chicken salad, quesadillas, enchiladas.
Our favorite go to meal is chicken parmigiano.
My favorite weeknight meal is a quick pasta dish.
I make spaghetti puttanesca with kalamata olives, capers, canned tomatoes and garlic. Instead of anchovies, I throw in a can of albacore tuna and season to taste. It is easy and really good!

Oh my gosh. These are great! My boyfriend, who typically does not like anything involving rosemary, loved them! I am making them for my Super Bowl Sunday friends who like to eat more on the healthy side.

Due to the size of the pieces and using chicken breast I cut the cook time in half. The flavor was delish and it didn’t caramelize as the photos suggested. Perhaps I’ll put them closer to the broiler next go around. My partner, who is notoriously critical of dry chicken, made me rethink the timing and I was grateful. Really great sauce, easy, and limited use of my time. It’s a winner.
