I have spent the last three days in a convention center in Baltimore, drinking 80 ounces of coffee a day, eating snacks and not sleeping much. So yeah, basically I look and feel fabulous!
Just kidding!!! n reality I feel really gross, really run down and in general like I need to do something kind of drastic to get back on track this week. For once (I hate to admit it) this is not even about tight pants or something- I just really feel pretty crappy. But Food is wonderful medicine and I am going to be consuming all of the veggies this week- whether it be in smoothie, salad or soup form, I’m game. The best way to start is to whip up a big batch of this soup- one of my favorite natural remedies, that also happens to be delicious!
I actually got this idea from my acupuncturist ( I LOVE ACCUPUNCTURE). I have noticed that while on Whole30 my digestive system has been kind of upset and definitely not feeling like itself. I have been doubling up on my Aloe Vera and now I am trying the natural remedy of Bone Broth. Because the broth is cooked for sooooo long, the bones really cook down and the broth is filled with collagen- which is healing to the gut. I found my chicken Bone Broth in the freezer section at my grocery store
But I don’t know if I am a sit down with a mug of hot bone broth kind of girl? (Do any of you do that?) So I followed my acupuncturists directions and sautéed some garlic and kale in olive oil and then pureed it with the bone broth and then reheated it all. SOOOOOO good. And I am not kidding, one day of sipping this has made quite a difference in how my stomach feels. And wait for it…… Pete, Pia and Coco thought it was as good as I did. So to be clear- my 7 and 9 year old girls slurped down mugs of this!
I thought I would share this with you because sometimes we all need a bit of a reset with our tummy. It is also really filling, so if you were just trying to detox from a weekend of heavy drinking and eating or are recovering from a cold or any other situation where you want to feel a little better or leaner- this Bone Broth and Greens Soup is where it’s at!!!
- 2 tablespoons olive oil
- 1 clove garlic, sliced into quarters
- 1 bunch of Tuscan kale, stems removed
- 24 ounces Bone Broth (thawed)
- kosher salt
- In a heavy pan over medium heat add the olive oil and garlic and cook until golden, stirring often, about 1 minute. Add the kale to the pan and sauté until the kale was wilted down, another 3-4 minutes.
- Add the Bone Broth to a blender and then add the kale and garlic. Puree on high until smooth and season to taste with kosher salt. Add to a medium pot and gently heat up – as the soup gets hot it will turn bright dark green. Serve into bowls or mugs.

Bone broth has lots of healing components and is very good for you. Do get organic though because you are cooking out all the yuck if you don’t! I do mine in the crock pot. I throw in the carcass from a cooked organic chicken from whole foods and fill with water and add onions if you want and cook for about 18 hours or even more. You will end up using almost every last drop of your chicken which feels good and then there will be left over chicken in there to make soup with and the gross stuff the dog gets. Do keep the gelatin stuff from the chicken because I have heard that is where the collagen is. I freeze mine, drink it plain (yum) or make any of my foods with it where I would normally put in broth. It is much cheaper than buying broth but does take a little work, but not too much.

Carina- did you ask them there? I am in Seattle and they had it at my local grocery store (Metropolitan Market) and they have it at PCC. Maybe just call a few places first?
Heather, when I saw the picture of this recipe, I thought it impossible to look as green. The first moment I had some time in the morning, I made it. Just had made some bone broth the day before. This is now my favorite morning drink, afternoon snack or anytime I’m hungry and don’t have much time to make something delicious. Thanks for putting this out, I suggest everybody give this a try. And it’s so healthy too.

Hi there! I just tried making this and after blending in my ninja, there are still several kale flakes that float to the top when the broth is sitting still.
Did anyone else encounter this? Do I scoop it out or just eat it up ha! I did get curly vs lacinto.. any suggestions are appreciate 🙂

this is beautiful but taste wise I did not like it too much. A bit bitter and the leaves don’t really blend well with the broth. I added coconut milk to make it a bit smoother and milder. As a healthy green drink – passable. But otherwise I’d skip it.
Hi Diana- I think it probably depended on what kind of bone broth you used? Also, you really have to blend on high to get it all integrated like in the video!

This is simply delicious! Thanks so much for sharing your recipe. Super easy and SO nutritious. Added a knob of ginger and used 16 hour homemade organic beef bone broth I’ve been making and stocking in my freezer. Certainly comes in handy during emergencies.
Could you please give ounces or grams on the amount of kale you have after de-stemming? I buy baby kale in a tub. Also, I’d like to make a smaller batch. Thanks!
