Hi Guys! With Memorial Day Weekend Coming up, I thought I would share with you my menu for the Holiday Weekend! Something to take a look at if you are planning to entertain and are looking for ideas!
Ok, here we go…
Crostini with Roasted Cherries and Thyme on Almond Ricotta with Honey Balsamic: The cherries are starting to arrive and I am OBSESSED! These are such a wonderful and unique way to enjoy them, not to mention an easy but elegant starter for your menu!
Smoky Artichoke Hummus Dip: This is always a crowd favorite and easy to put out with crudité for your guests who are trying to keep things light!
BLT Potato Salad: is a new twist on an old favorite. No mayo, obviously- I mean , have you met me!? But there is bacon and tomatoes (duh!) and for the lettuce, there is actually a ton of fresh mint leaves and freshly chopped parsley. This is an excellent combo- you must try it out ASAP!! Just delicious!
Persian Chopped Salad: Super crunchy and refreshing and so full of flavor it will not even cross your mind that you are eating so healthy!
Tomato Peach Avocado Salad with Cilantro Vinaigrette: This is not JUST gorgeous, but also really delicious. It is so fresh and bright and summery and everyone can eat it!
Ribs with Cherry Jalapeno BBQ Sauce: This is one of the top BBQ sauce recipes EVER!! And a must try with these perfectly grilled ribs.
Nectarine Mustard Grilled Salmon: This is one of my Summertime favorites and is always a great entertaining recipe as it is so easy and always turns out perfectly!
Raspberry Crisp: It’s Gluten-Free, Vegan and completely delicious! I love to top it with whipped coconut cream or vegan vanilla ice cream.
