OMG. You guys, I am leaving for New York on Wednesday and going to the Hamptons for the weekend (has anyone been there?? This will be my first time!) then I get back Sunday afternoon and move out of our house (for construction) and then leave Monday morning for GREECE and ITALY!!! I can’t wait. I seriously can’t.
So since I am getting ready to go on a serious vay-cay, I am starting this week with a big fresh salad!
This is my summer version of one of my favorite all time salads. I love the combination of strawberries and rosemary (both of which are growing like crazy in my garden!) and I think you will like the swiss chard which is standing in for any other kind of greens. I love chard and it is delicious raw!
This is perfect for a big summery dinner salad or for an over the top awesome lunch- enjoy!
- 4 pieces of bacon
- 1 boneless skinless chicken breast, sliced in half horizontally into two pieces
- 2 tablespoons rosemary needles, minced
- kosher salt
- 1 tablespoon olive oil
- 1 large avocado
- 1 large bunch swiss chard, finely shredded
- 1 cup fresh strawberry slices
- ⅓ cup marcona almonds (optional)
- Strawberry Rosemary Vinaigrette
- 1 clove garlic
- 3 strawberries
- 2 teaspoons dijon mustard
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 teaspoon chopped fresh rosemary
- kosher salt
- Make the vinaigrette by adding all of the ingredients to a blender and pureeing until smooth and then seasoning to taste with kosher salt. Take a few tablespoons and add it to the chicken to marinate.
- While the chicken is marinating, in a heavy skillet, cook the diced bacon over medium heat until it is crispy, turning often. Crumble into little pieces and set aside.
- Salt the pieces of marinated chicken breasts and add 1 tablespoon of olive oil and the rosemary to the same pan you cooked the bacon in. Add the chicken breasts to the pan.
- Cook the chicken breasts over medium-high heat until they are golden and crispy and cooked through, about 6 minutes.
- Meanwhile assemble the salad. Make a bed of shredded swiss chard, and add the strawberry slices, bacon crumbles and almonds (if you are using) in your bowl or on a platter.
- Slice the avocado and sprinkle the slices with kosher salt and pile them on the salad.
- Slice the chicken thighs and pile that on the salad. Drizzle the salad with the vinaigrette and serve immediately.
