Chicken Chopped Salad
After all of these freaking cupcakes lately, I needed a salad! I love a good chopped salad, and this one is actually on the healthy end of the spectrum. In fact save for a little blue cheese, this salad is jam packed with great vegetables, lean protein and healthy fat in the forms of avocado and pistachio nuts.
Oh yeah, and it tastes good. There are no measurements, because you can add whatever ingredients work for you, or make your family happy. (I used this salad as an opportunity to clean out my produce bin and use up all the random stuff!)
Enjoy for lunch or dinner with a good piece of crusty French bread.
Chicken Chopped Salad
1 large head fresh lettuce
1 avocado, chopped and salted
red bell pepper, diced
cherry tomatoes, sliced in half
celery, diced
shallot, minced
pistachio nuts
sprouts or micro greens
blue cheese, crumbled
Grilled chicken
Balsamic Dressing
My Basic Balsamic Dressing
Grilled Chicken:
Marinate two chicken breasts in the juice of half a lemon, 1 Tbs of olive oil and minced chives.
Grill the chicken until just cooked through.
Chop and set aside.
Lay out all of the chopped vegetables, cheese, nuts and chicken.
Tear the clean and dry lettuce into bite sized pieces and put them on top of the other ingredients.
Using a large knife, run it through the lettuce and other stuff multiple times.
When the salad has been chopped through well, drizzle the salad with the dressing.
Toss the salad with the dressing.
Serve in a chilled bowl and Enjoy!
