Sour Cream Biscuits

I got back from a whirlwind trip back East this weekend. I was in Philadelphia and all over New Jersey working on my new HGTV show. It was HOT folks. Like I got a third degree burn from touching the metal handle on my suitcase after it sat in the car hot- my face melted off hot- my patent leather (maybe plastic?) shoes liquefied hot- I shorted out a microphone because I was sweating, I mean GLOWING so heavily hot. It was nasty.

Then I came home to Seattle. Only that heat wave would let me appreciate coming home in the middle of the night to 50 degree and pouring rain weather. It made me feel like I should make soup (is that CRAZY talk to those who don’t live here??) and thought I would whip up biscuits to go with them. But I am tired- so they had to be easy biscuits.

And this is the fastest, easiest recipe for biscuits I have ever encountered. I typically make these with Greek yogurt (make a note- they are great too!), but the other night, I didn’t happen to have any around. I did however have sour cream.

And since sour cream has some fat in it, and I like the zing it has, I thought it could possibly be a good substitution. Well, I was right. These are really freaking great.

What gets me excited is all of the possibilities I see with this recipe. Couldn’t you add chives, or onions, or bacon, or anything really that you would ever consider putting in a dip that sour cream or yogurt in it??? (like chive and bacon dip or spicy herb dip)

I served these with a big hot bowl of soup, (like the pork chili verde I made last week) and they did an excellent job of soaking up the delicious extras!

I make these in a medium mixing bowl, by combining the flour, baking powder and salt. Then add the sour cream.

Use a spatula to start mixing the dough together. It will appear to have a shredded texture to it.

Then use your hands to really squeeze the dough together and into a disc.

Slice the dough into 8 equal wedges and set them on the sheet pan.

Bake the biscuits for 10 minutes at 450 degrees. Serve hot with butter.

  • 2 cups AP flour
  • 2 tsp baking powder
  • 1 1/2 tsp salt
  • 1 ½ cups sour cream

  1. 1. Preheat the oven to 450 degrees, and prepare a sheet pan with a silpat or sheet of parchment paper.
  2. 2. In a medium mixing bowl, combine the flour, baking powder and salt.
  3. 3. Add the sour cream.
  4. 4. Use a spatula to start mixing the dough together. It will appear to have a shredded texture to it.
  5. 5. Then use your hands to really squeeze the dough together and into a disc.
  6. 6. Slice the dough into 8 equal wedges and set them on the sheet pan.
